Honestly, I don’t know how these guys pull it off…making these deliciously amazing yet simple and healthy sandwiches. The lovely ladies behind the sandwich counter never miss a beat and are always up for banter or small talk. I make the run to Oneroa for a halloumi foldover on afternoons where my infant son refuses to nap. I get the sandwich toasted and a large almond flat white. I then inhale the sandwich in my car while driving to Onetangi Beach. By the time we park at the beach I’ve finished my sandwich and my son is finally fading and is ready to drift off in his pram as we stroll along the beach. It’s become a weekly ritual.
