Sitting on the terrace at Mudbrick, gazing over the ocean with a tasting plate of New Zealand seafood has become one of my favourite weekend activities. After visiting New Zealand for the first time a few years ago, I absolutely fell in love with Waiheke Island. As timings go, I am happily ''stuck'' here after our last visit just before the global lockdowns. The island time way of life combined with gorgeous coastlines and world class restaurants took our breath away - for me, Mudbrick's chef creates those moments as a dish with the Seacuterie. It changes depending on what they get in the delivery so its always a lovely surprise and keeps me going back again and again.
