Easterbrook Duck Breast Risotto

The duck breast is one of chef Tim Pickering's signature dishes and has been on the menu for years. It is utterly delicious and is cooked to perfection every time. The breast is cooked perfectly and is moist. The risotto is to die for with Shitake, a perfect Italian cheese - Grana Padano, and with a red wine reduction. To be honest it's a 'to-die-for-dish' and locals love it. Last night there were six of us eating at Fenice and three ordered the duck. Its such a substantial dish you don't need anything more.
