This dish is perfect. Squid ink linguine with its fantastic briny flavour and a snapper sauce cooked down from the carcass with a dressing of nduja breadcrumbs, perfect in every way and a signature dish from the city’s best chef. A celebration of local seafood with traditional Italian cooking. Everything Sergio cooks is wonderful but this dish stays in my memory and I want to go back and back and back and eat it all over again. The simplicity and perfect texture with sublime flavours is the best dish I’ve ever had.
