Willie Tuyen Nguyen bakes his own baguette for his banh mi and after years of experimenting, believes he has now the "perfect loaf". The baguette is key to a good banh mi. A wonderful combination of flavours and textures - spicy, savoury, salty, crunchy, sweet and fresh - this is the perfect sandwich. Banh mi is a favourite street food in Vietnam, and is a perfect example of how the combination of French and Vietnamese cooking style can produce something really special.
