Peanut Butter Mousse

I’ve been going to Circus Circus since I was at school. I actually have no idea how long it’s been around because it’s been around literally as long as I can remember like some sort of infallible brunch institution; the foodie version of Auckland Museum or the Auckland Art Gallery or Eden Park stadium. For me, the Peanut Butter Mousse with its exacting multiple layers of gooey caramel, smooth peanut mousse and crunchy chocolate crumb textures sort of sums up the magic of Circus Circus. It’s this place you can go on the weekend and it’s full of fun and whimsy and a sort of restrained ridiculousness. It was great as a kid and as I’ve grown into adulthood it never lost it’s shine.
