Not as famous as it’s cousin, laksa, I was first introduced to Khao Soi during my Singapore military service training stint in Kanchanaburi, Thailand. It’s a dish that’s influenced by neighbouring Myanmar. Served with two types of noodles - crispy and egg noodles - with tender chicken served with lime, chillies and pickled mustard greens in a coconut curry broth flavoured with a hint of ginger, turmeric and cinnamon. Not widely available at Thai restaurants here, what Mali Thai has is closest to what you’d get in northern Thailand. The curry soup is just so good. I know of many Burmese friends who also find Mali Thai's Khao Soi really special.
