I don't know much about the story behind the dish but it's by far the best meal I've eaten in NZ. Traditionally flounder can be light on flavour but this dish packs a punch on the palette. A beautiful balance of crispy skin with tender juicy flesh. The salty crispy shoe string fries a perfect match! It is all absolutely delicious. Served sea-side in a relaxed, very Ibiza-esque style restaurant with service that is on par with any fine 5 star dining establishment. Except far more welcoming! It's a winning combo and we happily recommend Three Seven Two and this dish in particular to all our Island visitors.
