A plate of rolled sushi filled with tiger prawn tempura, pickled daikon, huancaina mayo & tobiko arrives at your table. It's instantly flamed by the waiter using a mini gas gun, causing the tobiko to loudly crack, crackle and pop, its pure entertainment. The genius of a great chef is turning a dish into so much more than the sum of its ingredients. The added heat elevates the sushi flavour in such a delicious way, I want to go back before the weekend!
